To make the dish, potato slices are fried three times in goose fat, which can be heated to high temperatures without burning, says chef Joe Calderone, who helped create the over-the-top spuds. The super-hot oil causes moisture on the outside of the fries to quickly evaporate into steam. This gives the fries a crispy crust and a soft, fluffy texture inside.
